Prepared using fresh produce, our dishes evolve naturally depending on what’s in season and what takes our fancy. That said, at Istas Zaldi “the Basque seahorse”, fish always takes centre stage. The selection of our produce and suppliers is at the heart of our approach, underpinned by a constant commitment to quality.
To give you a concrete idea of our approach, here are a few examples of menus as they might be offered on any given day, depending on the market, the season and the inspiration of the moment.

The Basque Country, nestled between the sea and the mountains, offers us excellent produce. Our fish and seafood, sourced from the Atlantic, are fresh and wild; our French and Spanish meats are carefully selected; and our vegetables are generally sourced from small local producers and organic farms.
